Super Easy Pumpkin Pie Recipe

Check out this super easy pumpkin pie recipe perfect for Thanksgiving dessert. It only takes 30 minutes to prep and then you just pop it in the oven to bake.

Homemade Crust

  • 1/3 cup sugar
  • 1/2 cup butter melted
  • 1/4 tsp salt
  • 1 cup all purpose flour
  • 1 egg lightly beaten for egg wash

Pumpkin Pie Filling

  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 796 mL pumpkin purée
  • 1/2 cup whipping cream
  • 1/2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 2 tbsp flour


Homemade Crust

  • First for the crust, in a large bowl mix together the melted butter, sugar, and salt. Then slowly add in the flour until you have a consistent dough. Cover and refrigerate for now. See images 1 and 2.

Pumpkin Pie Filling

  • Next to prepare your pumpkin pie filling, cream together butter and brown sugar using an electric mixer.
  • Then add eggs, vanilla, and salt. Mix until well combined. See image 3.
  • Next add your pumpkin purée, cream, pumpkin pie spice, cinnamon, nutmeg, ground cloves, and flour. Mix until the batter is smooth and consistent. See tips 3 and 4 if you’re worried about consistency.

Assembly and Baking

  • Preheat your oven to 375°F.
  • Take your crust dough out of the fridge. Lay some wax paper out on your surface or sprinkle some flour on a clean surface to roll your dough on.
  • Roll out your dough until it is 1/4 inch thick and large enough to line the bottom of your pie pan. Then transfer it into your pie pan. Cut off the excess pie dough spilling out of the pan. See image 6.
  • Next pour your pumpkin pie filling into your pie crust, smoothing the surface with a spoon. See image 7.
  • Finally, take a fork and score the edges of your pie crust. Then, using a brush, paint the edges of your pie crust with your egg wash. See image 7.
  • Place in the oven and bake for 50 minutes to 1 hr, until your top layer has started to brown. See image 8.
  • Cool for 5-10 minutes before slicing and serving. Enjoy!
