I love when I only need to use one pan to cook dinner, because I absolutely hate washing dishes. Honestly though, I choose only to live with people that like washing dishes. I will do all the other house work, if you promise to always do the dishes. That is my love language.

So this bacon zucchini creamy tomato pasta is one of my favourite recipes. It’s quick and easy, and I just need my giant pan I bought in college to make it. I mean unless you count the pot I use to cook the spaghetti, which I don’t.

The best part about this recipe is that it’s healthy and AFFORDABLE. Your grocery bill for this recipe is only $20, and that includes the cheese! It’s dinner for four or meal prep for the week. You decide!

I usually have most of these ingredients in my fridge or pantry anyway. And actually, I came up with this recipe one evening when I only had a few random ingredients left in my fridge. If I didn’t use the zucchini, bacon, and cream soon, they were definitely going to go bad.

So my lack of groceries and laziness to go to the store has benefited you with this awesome quick and easy pasta recipe. I hope you appreciate my procrastination and food survival skills.

The amazing health benefits of the ZUCCHINI

If you still needed a reason to make this bacon zucchini pasta recipe other than the fact that you can make it all in one pan, here are some fun facts about our star vegetable.

Zucchini is part of the wonderful squash family, and is actually classified as a fruit instead of a vegetable; just like pumpkin. It’s high in vitamin A and C. And it’s a great source of antioxidants and known to help with your digestion (source, healthline).

So apparently if you make this recipe your immune system, skin, and stomach will thank you. Or thank me, depending on how you look at it. Anyways, let’s get cooking!

What do you need to make this bacon zucchini creamy tomato pasta?

How to cook your bacon zucchini creamy tomato pasta to perfection

Cut your bacon into small pieces by layering all 5 slices on top of one another, so you can slice through all 5 at the same time. This speeds up the process and makes it easier to cut the raw bacon slices into small pieces.

You can also use scissors and cut the bacon slices into tiny pieces that way. But I’ve found the first method to be faster and easier for me. I know most people fry the bacon and cut it later, but I didn’t want to have to take anything out of the pan for this one pan recipe.

Spread out your bacon evenly in your pan to fry

Next you want to, finely chop your onions, and thinly slice the zucchini into quarter circle slices. Thinner and smaller is better, so it melts into the sauce. I like to chop both of these while my bacon is slowly frying over low-medium heat. It just makes the process more efficient.

Cooking Tips

Tip #1: Spread out your bacon pieces on your pan, so they don’t stick together when they cook. And fry them on medium low heat, so you can chop your onions and zucchini while they cook.

Tip #2: Start cooking your spaghetti right after you add your onions and zucchini to the pan. This way it will be ready at the same time as your creamy tomato sauce.

Sauté your onions with the bacon on medium

Once your bacon is crispy, add in your onions to sauté them with the bacon, until they’re translucent. Then add your zucchini and sun-dried tomatoes to the pan, and sauté all together.

Add in your zucchini and sun-dried tomatoes and sauté

Only add your minced garlic after all your vegetables and bacon have been sautéed and cooked to perfection. I say this because depending on how high your heat is, your garlic might end up burning before you add your creamy tomato sauce and that’s not the goal.

Add in your tomato sauce and cream and stir

After you add your tomato sauce and cream to the pan and season with salt and pepper to your heart’s content, allow the sauce to simmer on low while covered. Once the sauce comes to a boil, you can add your cooked spaghetti and turn the heat off. Mix the spaghetti and the sauce while they’re both still hot. This will give you the perfect bacon zucchini creamy tomato pasta.

Don’t forget to eat it with some parmesan cheese, or a lot if you’re like me!

  • large frying pan with cover
  • kitchen knife
  • spatula
  • wooden spoon

  • 5 slices bacon
  • 1/2 onion
  • 1 zucchini
  • 1/4 cup sundried tomatoes
  • 4 cloves garlic minced
  • 284 mL Campbell’s tomato with basil and oregano 1 small can
  • 1 cup cream
  • salt and pepper to taste
  • 10 oz spaghetti cooked
  • grated parmesan cheese for serving

  • Heat a frying pan to medium heat. While you’re waiting, slice your bacon into small pieces, similar to pancetta cubes. Once the pan is heated, add your small bacon pieces, and spread them throughout the pan, so they cook evenly. Lower the heat a bit.
  • While your bacon is frying on low, finely chop your half onion, and slice your zucchini into thin circles, then again into quarters.
  • Using a spatula or wooden spoon, sauté the bacon pieces, to make sure they get cooked through. Then add your onions, and sauté well with the bacon. Next add in your zucchini slices, and sundried tomatoes. Sauté until both are well cooked, and then add minced garlic, and stir.
  • Allow your bacon zucchini mixture to cook for a minute before lowering the heat a bit, so the garlic doesn’t burn.
  • Next add in your can of campbell’s tomato with basil and oregano and your cup of cream. Stir until all your ingredients are well mixed and add salt and pepper to taste. Cover your pot, and allow your sauce to simmer on low for 5 minutes.
  • Once your creamy tomato sauce comes to a boil, add in your cooked spaghetti noodles, turn off heat, and mix well with sauce.
  • Serve with as much grated parmesan cheese as you like. Enjoy!
