Super Easy Pumpkin Pie Recipe for Thanksgiving

The holidays are coming! I know a lot of us don’t bake very often because who has the time when you’re working a full time job, in college, or raising a family. I’m sure there are some of you out there that might be doing all three, and you are my heroes!

So to make your lives easier and encourage those of you who are afraid to try baking, I’ve come up with this super easy pumpkin pie recipe. I believe even my mom could make it, and she definitely does not bake. I learned from a young age that I would have to be the baker in the family.

If you really want to try baking your own pumpkin pie this year instead of buying one from the grocery store, but you never bake, this is the recipe for you. It only takes half an hour to prep the crust and the pumpkin pie filling, and then you can just pop it in the oven for 50 min to an hour, while you do other things.

Thanksgiving should be about showing the ones we love that we’re grateful for them, and what better way is there than baking them something delicious.

I came up with this pumpkin pie recipe yesterday after work because I realized, I might not have time to bake on thanksgiving day like I normally do. This year we’re hosting the family at our house, which means we’re doing most of the cooking too.

Normally I just make pulled pork and sweet potato mash, and let the other adults take care of the rest. But this year, I’m making major contributions. So without further ado, here are my super easy pumpkin pie recipe tips.

Super Easy Pumpkin Pie Recipe Tips

  1. Make sure that the butter for your crust is completely melted, but not super hot when you mix in your sugar and salt. You don’t want the two dissolving in your butter.

  2. The butter for your pumpkin pie should be softened not melted. If you don’t have time to wait for it to come to room temperature, use this trick. Microwave it at 5 second intervals until you can easily slice through it with a knife. Don’t put it in there for 20 seconds straight or else you’ll end up with a butter puddle. Which is not what you want for pumpkin pie.

  3. Keep in mind that the cream you add to your pumpkin pie filling is what makes it moist and smooth. If you are the kind of person that wants a smoother texture, add more cream. See tip four on how to balance this.

  4. For every 1/4 cup of cream you add, also add 2 tbsp of flour. Flour acts as a thickener, so that your pumpkin pie filling won’t get too runny.

Homemade Crust

  1. First for the crust, in a large bowl mix together the melted butter, sugar, and salt. Then slowly add in the flour until you have a consistent dough. Cover and refrigerate for now. See images 1 and 2.

Pumpkin Pie Filling

  1. Next to prepare your pumpkin pie filling, cream together butter and brown sugar using an electric mixer.
  2. Then add eggs, vanilla, and salt. Mix until well combined. See image 3.
  3. Next add your pumpkin purée, cream, pumpkin pie spice, cinnamon, nutmeg, ground cloves, and flour. Mix until the batter is smooth and consistent. See tips 3 and 4 if you’re worried about consistency.

Assembly and Baking

  1. Preheat your oven to 375°F.
  2. Take your crust dough out of the fridge. Lay some wax paper out on your surface or sprinkle some flour on a clean surface to roll your dough on.
  3. Roll out your dough until it is 1/4 inch thick and large enough to line the bottom of your pie pan. Then transfer it into your pie pan. Cut off the excess pie dough spilling out of the pan. See image 6.
  4. Next pour your pumpkin pie filling into your pie crust, smoothing the surface with a spoon. See image 7.
  5. Finally, take a fork and score the edges of your pie crust. Then, using a brush, paint the edges of your pie crust with your egg wash. See image 7.
  6. Place in the oven and bake for 50 minutes to 1 hr, until your top layer has started to brown. See image 8.
  7. Cool for 5-10 minutes before slicing and serving. Enjoy!
